  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook, stirring occasionally, until golden brown, about 5 minutes.
  2. Add the garlic powder, smoked paprika, salt, and pepper, and stir to combine. Add the onion and garlic and cook, stirring occasionally, until the onion is soft and beginning to brown, about 4 minutes.
  3. Stir in the rice and continue to cook, stirring occasionally, until the rice is lightly toasted, about 3 minutes.
  4. Add the chicken broth and bring to a boil. Reduce the heat to low, cover the skillet, and simmer until the rice is tender and most of the liquid has been absorbed, about 15 minutes.
  5. Uncover the skillet and stir in the black beans and corn. Cover and simmer until the beans and corn are heated through and the liquid has been absorbed, about 5 minutes.
  6. Garnish with the chopped cilantro and serve hot.
