Thai Pork Fried Rice

Ingredients

  • 2 tablespoons vegetable oil

  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh basil

Instructions

  1. Heat oil in a large skillet over medium heat. Add pork and cook, stirring occasionally, until browned and cooked through, about 10 minutes.
  2. Add onion, garlic, ginger, curry powder, coriander, salt, and pepper. Cook, stirring occasionally, until onion is softened, about 5 minutes.
  3. Stir in diced tomatoes and cook until most of the liquid has evaporated, about 5 minutes.
  4. Add cooked rice and stir to combine. Cook until heated through, about 5 minutes.
  5. Stir in fish sauce and herbs and cook until heated through, about 1 minute.
  6. Serve hot with additional herbs as desired.
