Let's get started! ## Recipe for Spring Chicken Pot Pie ### Ingredients - 2 tablespoons of extra-virgin olive oil - 2 cups of diced onions - 1 cup of diced celery - 1 cup of diced carrots - 2 cloves of garlic, minced - 2 tablespoons of all-purpose flour - 2 cups of chicken broth - 2 cups of cooked, diced chicken - 1 cup of frozen green peas - 2 tablespoons of chopped fresh parsley - Salt and pepper, to taste - 2 (9-inch) pie crusts ### Directions 1. Preheat oven to 375°F (190°C). 2. Heat the oil in a large skillet over medium heat. 3. Add the onions, celery and carrots. Cook, stirring often, until the vegetables are softened, about 5 minutes. 4. Add the garlic and cook for an additional minute. 5. Add the flour and stir to combine. 6. Gradually add the chicken broth and stir until the mixture is thickened. 7. Add the chicken, green peas, parsley, salt and pepper. 8. Spoon the mixture into a 9-inch pie dish. 9. Place the top crust over the filling, crimp the edges to seal, and cut several slits in the top. 10. Bake for 30 to 35 minutes, or until the crust is golden brown. 11.
